Olivia, very nice job. I do have a suggestions for you on the resume: put your clinical rotations at the end of the resume. Perspective employers assume you had the regular rotations, but are very interested in your prior work experience, so list those first. Rest of the information is great and it is well organized.
Your cover letters look good too; I like how you have personalized the letters. Sharing how COVID-19 shaped your educational experience is fabulous and will make you stand out in the crowd. Once you know which positions you will apply for, I would be happy to have another look.
